[Recipe] Spinach with Salted & Century Eggs

I come across this dish quite a few years ago and I truly love the taste combining the savoury of salted egg and the distinct taste of century egg, makes this dish so delectable.

While it's quite high in cholesterol, but it's packed full of iron due to the spinach. It's so simple that it's done in no time.

Here's what you need and the process of preparing -

Ingredients
1 pack of round spinach*
1 pack of purple spinach*


2 cloves garlic (minced)
3 Salted Eggs
1 Century Egg (optional; alternatively you may use regular egg)
200ml water
2 tsp Concentrated Chicken Stock

Process
1) Prepare the salted eggs and century egg by steaming them for 15mins
2) After shelling the salted eggs keep 3 yolks and 1/2 of the egg white of one salted egg and discard the rest. Roughly chop the century egg.
3) Heat up about 2 tsp of cooking oil and saute minced garlic till fragrant.
4) Add the spinach and stir fry for about 30secs before adding the chicken stock and water
5) Let the vegetables cook and before turning out the heat, pour in the eggs, give it a light toss to combine.
